baked berry crumble

This recipe is perfect for either a hot breakfast or a cool and sweet lunch box addition. The crumble is going to give your teen lots of fibre, which is going to support their digestion and give them long lasting energy too! Pairing this with Greek yoghurt is going to give them a nice hit of protein too so they feel satisfied and energised for much longer!

recipe (serves 6)


ingredients

  • 2 cups oats

  • 1 cup walnuts

  • ½ cup pumpkin seeds

  • ¼ cup chia seeds

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • Pinch of salt

  • 1 tbsp vanilla

  • 1/4 cup light olive oil

  • 1/3 cup honey or maple syrup

  • 2 cups almond milk

  • 4 cups frozen mixed berries


method

1. Preheat oven to 180C.

2. In a large bowl, mix together the oats, walnuts, pumpkin seeds, chia seeds, cinnamon, baking powder, salt, vanilla, light olive oil, honey/maple syrup and almond milk. Set aside.

3. Pour the frozen berries into a large non-stick baking dish (I used this one). Pour the oat mixture over the top and use a spoon to spread it all out until the berries are covered.

4. Bake for 40 minutes.


Tip: You have two options in terms of serving. You can have it hot with some yoghurt as a delicious breakfast (this comes out so nice after it’s been heated in the microwave).
