chocolate & chickpea clusters

If you’re like me and find yourself crawling to Christmas this is the snack for you!! I am working retail over summer and our little boutique is as busy as ever! This snack is keeping my energy levels high and because of the fibre and protein the energy is sticking around. These are the perfect combo of crunchy and chewy and delectable.

ingredients

  • 1 400g can chickpeas, rinsed and drained (roasted)

  • 1 cup roasted peanuts

  • 1 cup dates, roughly chopped

  • 100g dark chocolate (1 used Lindt 85%), melted

  • 2 tbsp peanut butter

  • Salt flakes


method

1. Preheat your oven to 180C.

2. Pour your rinsed and drained chickpeas onto some paper towel and gently pat them to remove some of the moisture.

3. Line a baking tray with baking paper and pour the dried chickpeas over the top. Bake for 35 minutes or until golden and crispy.

4. In a large bowl mix together the crispy chickpeas, peanuts, dates, melted chocolate and peanut butter until well combined. Pour the mixture back onto the lined tray and use a spoon to pat it down in a single layer. Sprinkle with sea salt flakes and pop into the fridge to set for a few hours.

5. Remove from the fridge and use your hands or a knife to break the mixture into clusters.

These are best stored in an airtight container in the fridge.
