gingerbread snack balls

I work in retail over the Christmas period, so I am always looking for easy snacks I can eat between customers to give me the energy I need to smile and be joyful and wrap lots and lots of presents!! These are absolutely perfect because they’re loaded with fibre for long lasting energy and they are can be eaten with one hand (bonus!!)

recipe (makes 15)


ingredients

  • ½ cup peanut butter

  • 1 1/3 cup almond meal

  • ½ cup cashews

  • ½ cup buckinis

  • Zest one orange

  • 3 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 tbsp cinnamon

  • ½ tsp ground ginger

  • ½ tsp all spice

  • Pinch of salt

  • 1/4 cup water


method

1. In a food processor, blitz together the peanut butter, almond meal, cashews, buckinis, orange zest, maple syrup, vanilla, cinnamon, ground ginger, all spice and salt until it forms a thick dough. If it’s struggling to blend, add in a little bit of water 1 tbsp at a time until it forms a thick dough you can roll.

2. Spoon the mixture onto a plate and then roll them into balls.

3. Eat straight away and store the rest in an airtight container in the fridge.


tip

These are best stored in the fridge for a couple of weeks!
