honey & oat cookies

These cookies are super easy and delicious that the whole family will love. All you need is a bowl, a spoon and a tray! You might already have all the ingredients you need to make these!!

recipe (makes 12)


ingredients

  • 1 cup rolled oats

  • 3/4 cup shredded coconut

  • 1/2 cup almond meal

  • 1 cup oat flour (or plain flour)

  • 1 tsp salt

  • 1 tsp bicarbonate dissolved in 4 tbsp hot water

  • 1/4 cup coconut oil

  • 1/4 cup honey


method

1. Pre heat your oven to 180C and line a tray with baking paper.

2. In a large bowl mix together the oats, shredded coconut, almond meal, flour and salt.

3. In a small bowl mix together the bicarbonate mixture, coconut oil and honey.

4. Add the wet ingredients to the dry ingredients and mix together until combine.

5. Spoon the mixture onto a baking tray (you can make the cookies any size you like!).

6. Bake for 15-20 minutes rotating the tray after 10 minutes.

7. Allow to cool completely before eating them all up or storing in an airtight container in the pantry.


tip

I would highly recommend adding chocolate chips to this recipe to make them even more delicious!!
