peanut butter overnight oats

If you have been following me for a while, you will know that I LOVE overnight oats! It is one of the few breakfasts that I know will fill me up and give me the energy I need to get through the morning. The best part is that you do it the night before so there is no prep in the morning 🥳 I’ve made the recipe takeaway (i.e. in jars), but you can just as easily do it in little bowls. recipe (serves 2)


ingredients

  • 1 cup rolled oats

  • 1.5 cups milk (oat, soy, almond, cows, rice)

  • 2 tbsp chia seeds

  • 1 tbsp pumpkin seeds

  • 1 tbsp sunflower seeds

  • 2 tsp cinnamon

  • 1 tbsp maple syrup or honey

  • 2 tbsp peanut butter (I used the Mayver’s protein vanilla one)

  • 1.5 cups berries


method

1. In a large bowl, mix together the oats, milk, chia seeds, pumpkin seeds, sunflower seeds, cinnamon, maple syrup and peanut butter.

2. Evenly distribute the mixture into two jars.

3. Pour the berries over the top and seal the jars.

4. Pop the jars in the fridge to set overnight and enjoy the next morning!
