seed filled muesli bars

Something I love doing, especially on a Sunday, is preparing some easy snacks that I can have ready to go when I need them. These bars are easy to make, high in fibre (for long lasting energy), satisfying, and something that are easy to eat on the go (perfect for teens that are always running from task to task). recipe (makes 10)


ingredients

  • 2 cups rolled oats

  • ½ cup pumpkin seeds

  • ¼ cup chia seeds

  • ¼ cup sesame seeds

  • ¼ cup maple syrup

  • ¼ cup light olive oil

  • ½ cup almond butter

  • 1/3 cup milk (I used soy milk)

  • 100g 70% chocolate (I used one block of Lindt)


method

1. Line a 20x20cm baking tin with baking paper and set aside.

2. In a large bowl, mix together oats, pumpkin seeds, chia seeds, sesame seeds, maple syrup, olive oil, almond milk and milk.

3. Pour the mixture onto your lined baking tin and use a spatula to spread it out into a single layer. Pop it into the freezer to set for an hour.

4. Melt the chocolate and drizzle over the top. Allow to set for an additional few hours in the freezer or overnight.

5. Remove from the freezer and cut into bars. Store in the freezer for up to two weeks (but they won’t last that long, trust me!)
