carrot & sultana muffins
Is there anything quite like the smell of muffins baking in the house? There is something so comforting to me about the smell of cinnamon and sweetness. These muffins are super easy to make and make for a delicious breaky and lunch box addition. You can also make this into a carrot loaf like my mum did and top it with cream cheese frosting for an extra dollop of fun!
recipe (makes 12)
ingredients
1.5 cups almond meal
1 cup wholemeal flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp all spice
1 pinch salt
Zest of ½ orange
Juice of ½ orange
3 eggs
¼ cup light olive oil
¼ cup maple syrup
1 tsp vanilla extract
1 cup carrot, grated (about 1 large carrot)
½ cup sultanas
1 cup walnuts, roughly chopped
method
1. Preheat your oven to 180C and pop your patty pans into a muffin tray.
2. In a large bowl, add in your almond meal, flavour, baking powder, baking soda, cinnamon, all spice, salt, orange zest and orange juice.
3. Crack your eggs into a separate bowl (just to make sure they’re all good) and then pour them into the try ingredient mix along with the olive oil, maple syrup and vanilla extract. Mix until combined.
4. Fold in the carrot, sultanas, and walnuts.
5. Use two tablespoons to evenly distribute the muffin mixture into the patty pans.
6. Bake for 15-20 minutes or until a knife inserted into the centre comes out clean.
