chicken & carrot patties
If you’re looking for an easy dinner mid-week that you can prepare on the weekend you’ve clicked on the right recipe. These little patties are easy to make and packed with flavour from all the spices! The leftovers also make for great lunch box additions in wraps, rolls and salads. Let’s get into it 👇
recipe (makes 12)
ingredients
500g chicken mince
1/2 onion, finely diced
1 large carrot
1 tsp granulated garlic
2 tsp ground cumin
1 tsp ground coriander
1 tbsp paprika
1 cup breadcrumbs
1 egg
Salt and pepper
Olive oil
method
1. Preheat your oven to 180C with the fan on.
2. In a large bowl use your hands to mix together the chicken mince, onion, carrot, granulated garlic, cumin, ground coriander, paprika, breadcrumbs, egg, salt and pepper.
3. Drizzle olive oil onto a non-stick baking tray.
4. Roll the chicken mince mixture into balls (about the size of a golf ball) and play them a couple of inches apart on the tray.
5. Bake for 30-35 minutes or until golden on top and completely cooked through.
Tip 1: These are delicious served with mashed potato, salad and some broccolini. They are also fabulous to include in a wrap with some hummus, avocado, tomato, spinach, and cucumber!
Tip 2: These patties freeze really well. Once you have rolled them, pop them into a container and ensure that each layer is separated by a piece of baking paper. The night before you want to cook them, remove from the freezer and put them in the fridge. You can then bake them the next night for dinner - so easy!
