choc & seed bars

School is back, which means another few months of thinking of what to put in the lunch box 🙉 These choc & seed bars are the perfect snack to prepare on a Sunday to have ready to take to school. They are loaded with fibre to give your teen the long-lasting energy they need to get through the school day. They are also no bake and happen in one bowl, which is great for enticing your teen to get into the kitchen to make them too! Hope you love this one!

recipe (makes 8-12)


ingredients

  • ½ cup almond butter

  • 2 tbsp honey

  • 1 tsp vanilla extract

  • ½ cup rolled oats

  • ½ cup pumpkin seeds

  • ½ cup walnuts

  • ¼ cup shredded coconut

  • 2 tbsp chia seeds

  • 1 tbsp cinnamon

  • Pinch of salt

  • Dark chocolate to drizzle


method

1. Line a 20x20cm baking tin with baking paper and set aside.

2. In a large bowl, mix together the almond butter, honey, vanilla, oats, pumpkin seeds, walnuts, coconut, chia seeds, cinnamon and salt.

3. When the mixture forms a thick paste, pour it onto your lined baking tray and use a spatula to pat it all down so it is evenly distributed and tightly packed. Set aside.

4. Melt your dark chocolate in the microwave or over a double boiler. Drizzle over the top of the bar mixture and pop it into the fridge to set for a few hours (it’s best to let it set over night).

5. Take the bars out of the fridge and cut them into either squares or rectangles. Store in an airtight container in the fridge for up to two weeks! That’s it!
