sunshine loaf

I love love love using oranges in my sweets, so when I got given a massive bag of homegrown oranges from a family friend I was so keen to see what I could create with them. This loaf is sweet, fluffy and absolutely delicious and I’m delighted to share the recipe with you!! If you make this, please send a picture because I’d love to see 📸

recipe (makes 1 loaf)


ingredients

  • 3 eggs

  • 1/3 cup light olive oil

  • ¼ cup maple syrup

  • Zest of one orange

  • Juice of ½ orange

  • 2 cup almond meal

  • 1 tsp baking powder

  • 1 tsp bicarb soda

  • Pinch of salt

  • ½ cup berries


method

1. Link a loaf tin with baking paper and preheat your oven to 180C.

2. In a large bowl whisk together the eggs, light olive oil, maple syrup, orange zest and orange juice.

3. Pour your berries into a small bowl and add one tbsp of almond meal. Mix this together (this is going to ensure the berries don’t sink to the bottom of the loaf). Set aside.

4. Add the almond meal, baking powder, bicarb soda and a pinch of salt to your wet mixture and mix until combined. Fold in the berries.

5. Pour the batter into your lined tray and pop it into the oven for 35-40 minutes or until a clean knife inserted into the centre comes out clean.

6. Set aside to cool before slicing and enjoying with your favourite hot drink!

TIP: If loafs aren’t your thing, no stress! This batter works perfectly for little muffins too, just reduce the baking time to 25-30 minutes.
