creamy pumpkin and butterbean curry

Nothing says winter warmer to me more than a curry. The heat from the bowl and the spices is enough to warm me up even on the coldest of winter days. Max and I have been having this nearly once a week all winter, so I thought I would sneak this one in before winter is over (🥳). ALSO, this recipe works beautifully with chickpeas, some chopped zucchini and mushrooms, so definitely don’t let the recipe limit your creativity.

recipe (serves 3-4)


ingredients

  • ½ brown onion, finely diced

  • 1 clove garlic, minced

  • 1 tbsp curry powder

  • 1 tsp thyme leaves

  • 1 tsp garam masala

  • 1 tbsp paprika

  • 1 tsp cumin

  • 1 tsp ground coriander

  • Pinch of chilli flakes

  • 2 400g cans butterbeans, rinsed and drained

  • ½ butternut pumpkin

  • 400g crushed tomatoes

  • 2 cups vegetable stock

  • 270mL coconut cream

  • 3 cups spinach

  • Olive oil

  • Salt

  • Brown rice to serve


method

Method:

1. Pour a few tbsp of olive oil into a large saucepan with high sides over medium-high heat. Once the oil has heated, add in the onion and garlic and sauté until the onion is translucent.

2. Add the curry powder, thyme, garam masala, paprika, cumin, coriander and chilli flakes and continue to sauté until they become really fragrant.

3. Add in the butterbeans, pumpkin, crushed tomatoes, vegetable stock and a sprinkle of salt. Once it starts to simmer, put the heat to low and cover with a lid. Allow to cook for 15 minutes or until the pumpkin has softened.

4. While the curry is cooking, you can prepare the rice you would like to serve this with.

5. After 15 minutes, stir through the coconut cream and spinach. Allow the coconut cream to heat through and the spinach to wilt for a couple of minutes. Taste for seasoning and adjust if need be.

6. Serve the curry alongside the rice for the perfect winter warmer recipe!

This recipe reheats so beautifully so I usually make a massive batch and enjoy it for lunches during the week, it’s like a hug in a bowl.
